They couldn't eat all the pudding!!!

Made a 4x lemon sponge pudding for tea last night and they couldn't eat it all - polished it off for brekky! Yum yum, this is my fav dessert!

I thought you'd never ask! ! ! !
Beat together 1/2c sugar and 1T butter. Add, in order, 2T flour, 1/4t salt, rind and juice of a lemon, 1c milk and 2 egg yolks.
Beat white until stiff and fold through the lemon mixture. pour into a buttered pie dish and stand in a basin of water.
Bake in a moderate oven (170C ish) until golden and starting to come away from the sides.
I double this and double it again.
You end up with lovely lemon custard on the bottom and awesome sponge on top.

speaking of lemons i made the edmonds lemon meringue pie for the first time ever and used the edmonds recipe for short sweet pastry also. it was a huge sucess for a first timer and very cost effective. especially when your neighbours have lemons. yum
