I blanched mine for stir fry. Leaves for soup I freeze in small lots, as is. Not a lot as often we freeze veg and forget to use it.

How long do you leave in boiling water?

I have never blanched celery. Usually just chop it up, Throw into a plastic bag and into the freezer. Then it'sready to take out and add a hand full or 2 for soups, stews, casseroles etc.

I do as per Susie but be aware that due to high water content it doesn't thaw crisp. OK in with something for adding flavour. Take off as many "strings" as possible and cut fine.
