If you do not like the breadcrumb option then you can also just make a thick vanilla custard with some grated lemon rind.

Hi. Nope not the one I was after. Lemon Meringue pudding is just like the pie, but with no crust. :)

I just use the Lemon meringue pie recipes and don't put it in the pie case just into a baking dish direct. The Edmonds one seems to be quite good.

Mum always made lemon meringue sauce, then floated the meringue of vanilla wine biscuits. Yummy and easy to do

Baked Lemon Pudding: 1 small cup sugar, 1oz butter, 2 rounded tbs flour, juice & grated rind of a lemon, 1 c. milk, 2 eggs. Cream butter and sugar; add flour, lemon juice & rind, milk & well-beaten yolks of the eggs; beat all together well. Beat egg-whites stiffly, fold lightly into mixture; pour into buttered pie-dish; stand dish in a dish of cold water in the oven & bake about 180deg. C, 30 - 35 minutes. Should be a fine sponge on top, with a lemon sauce underneath. Serve as soon as possible. - from a 1950's 'My Daily Dinner' - have made this successfully often.

The Final Friday Docktail Parties are a HUGE SUCCESS!!! A BIG Shout Out goes out to CRAIG BRIDGES for your part in making the Sarasota Sailing Squadron THE PLACE TO BE on the FINAL FRIDAYS of the month. It's a great time with a great band (from 7:30-10:00pm) and great frndies. And is family friendly, too. We wouldn't miss it.
