I have a breville slow cooker and i was wondering weather you could prove the dough in the slow cooker on 'KEEP WARM' setting

For yeast dough maximum 30 degrees otherwise it starts killing the yeast.

Uli is right Spotswood yeast is a living thing and can die if overheated and also stop working if too cold then restart once warmed up. So I would avoid the slow cooker and just leave it longer to prove on the kitchen bench. Longer proving makes better tasting bread anyway in my opinion.
