I sell them, but have not used the Dutch oven myself. I have a Le Creuset cast iron casserole which would be similar. I prepare on the stove top and then cook in the oven. You do not need a high temp with the cast iron when you use it on the stove top - heat it gently and always with something in it, such as a little oil-dont heat it empty.
