I have done them in the slow cooker and in oven slowly. Made a casserole the other day and cooked in oven for about 3 hours. Very tender and fell off the bone, yummy.

They would be delish in your slow cooker or oven casserole,
Google an Irish Stew recipe.

Do you brown them first.

Recipe i got off here years ago havent got round to making it.
6 mutton neck chops
2 tablespoons brown sugar
1 teaspoon ground ginger
1 teaspoon curry powder
1 oxo beef cube ( or 1 tsp. dry stock)
1/4 cup tomato sauce
1½ cups hot water
2 tablespoons cornflour
2 tablespoons water
Brown chops in a pan, place in crockpot Mix brown sugar, ginger, curry powder, stock
cube, tomato sauce and hot water together. Pour over chops, cook until tender.
Skim any fat from
the surface using paper towels. Mix cornflour and water together. Stir
into meat an bring to boil to thicken.
Cook about 5 hours,

Always flour and brown off the neck chops first. in hot oil. add carrot garlic onions and flavourings. then cook either in slow cooker or long and slow in an oven bag in the oven.but remember mutton chops are fatty.so let them cool and scrap off the fat.otherwise they dont taste too good with all that fat around them

This.

And a tip from the "No Mess Fairy" - put 1/2 cup flour into a clean supermarket bag, add plenty of salt and pepper, throw neck chops in and coat thoroughly, then brown the chops.

No messy hands, just chuck the bag when finished.
