Steamed veges and salad or could do a stir fry, either way but always with plenty of veg.

Don't do veg on a sat night, but thanks anyway, decided on 2 fresh eggs and a glass of sav :-) The chop's tough

I’d cut into chunks and make Thai sweet pork with it and serve it with rice and stir fried greens with ginger.

What sort of Pork Chop was it, Loin would had been grilled a few minutes (after being rubbed with s & P and Olive oil) each side served with some Halloumi Cheese slices pan-fried, and thickly sliced Beef Steak Tomatoes with a glass of Sav or if Shoulder Chop then into a fry-pan a little bit in olive oil or butter then gently simmer in with some sav, a bit of chopped fresh sage and then served with that pan-fried cheese.

Here you are:

Thai Sweet Pork

Serves 6
900g pork belly, pork chops, pork scotch fillet
2 tab dark soy sauce
1/2 tsp salt
2 tab peanut or coconut oil
2 onions, chopped
2 tab palm sugar
2 tsp shrimp paste
4 tab fish sauce
2 tab dark soy sauce
2 tab Thai chilli jam
3 tsp Korean chilli flakes
2 Kaffir lime leaves

2 c fresh herb leaves to garnish - basil, coriander, mint, Thai basil, dill, Vietnamese mint as available. Marigold petals as available.

Mix pork, 2 tab soy sauce & salt. Marinate 30 min.

In large pan cook oil & onion, when soft add sugar, shrimp paste, fish sauce, soy sauce, chilli jam, chilli and lime leaves. Cook until caramelised. Add pork, fry 3 min stirring to coat pork in flavourings. Pour in enough water to cover amply, reduce heat, cover and simmer 3 - 4 hours until very tender. Check liquid level occasionally. You should end up with a small amount of thick sauce.

Immediately before serving add fresh herbs and petals and toss briefly.

Serve with rice and a tomato cucumber salad or a plain green vegetable.
