Tough dry pork

I bought a ready cooked roast of pork from Pak n Save. Unfortunately its dry and tough. Im thinking about putting it in the slow cooker, but with what? Any ideas?

I think I would mince it and add it to some stewed apple. Then decide if it was edible or not. If it was, well, I once made a potato topped pie of minced cooked pork a la shepherds pie style. Rich, but definitely edible. But I also had gravy to mix it with.

vomo2, maybe you could use the pork for this recipe.

COTTAGE PORK PIE
2 tbsp butter
1 onion, finely sliced
2 cooking apples, diced
2 rashers bacon, chopped
500g pork mince
¼ tsp dried sage
salt and pepper
1 tbsp flour mixed with ¼ cup water
a further ¾ cup water
1½-2 cups mashed potatoes

Melt the butter, then add the onion and cook until it is soft. Add the apples and bacon. Cook for 2-3 minutes, then add the pork mince. Cook until the mince is light brown, then add the sage, salt, pepper, flour-water mix and the remaining water. Bring to the boil and simmer gently for 5-10 minutes. Place in a medium-sized casserole dish and top with the mashed potatoes.
Cook at 180°C for 20 - 30 minutes, or until golden brown.

I would make a tasty gravy and slice the pork into it. Reheat gently.
