Put everything into a large clean container and stir until the sugar has completely dissolved. Leave for 3 - 4 days. Strain through a fine cloth and pour into sterilised bottles.
This is ready to drink after a few days.
This version is meant to be drunk undiluted but I have made it using only 2 litres of water, bringing it to the boil to dissolve the sugar and then putting it in sterilised bottles. I used the smaller quantity of sugar and double the quantity of ginger. It can be used hot or cold.
