I thought I would share that I found a recipe online for passionfruit skin jam, and it is really nice.
The texture is a little different. Its kind of like sugared rind and has a very delicate flavour. Dont expect it to taste like passionfruit - it is more like a very mild marmalade.
I just love using things that would normally be thrown away. lol.
