Anyone here make a really good parsnip soup recipe that they can recommend?
A fare while ago I had some at the the French Delicatissen's, which left a lasting impression.

I made a delicious lightly curried parsnip and apple soup but can't find the recipe now.

This is delicious - well I think so!
Curried pear & parsnip soup
Makes about 4 bowls
3 tbsps olive oil
1 medium onion, diced
4 parsnips – peeled and chopped
1 medium potato, diced
1 pear, diced
1 tbps curry powder (make sure it’s fresh)
1 tsp turmeric
½ tsp ground cumin
½ tsp sea salt
Decent grind black pepper
1 L water or vegetable stock
4 rashers middle bacon, cooked to crisp, to serve
2-3 tbsps finely diced chives
1. In a large saucepan sauté onion’s in oil until soft. Add parsnips and potato and cook gently for 10 minutes until beginning to soften. Add pear, spices and seasoning and continue to sauté for 5-7 minutes stirring occasionally. Pour over water or stock and simmer until vegetables and pear are very soft.
2. Blend to smooth with a stick blender, or in batches in a food processor. Pour back into saucepan and add more water if it is too much like puree instead of a soupy consistency. Bring to rapid simmer until piping hot.
3. Serve topped with crispy bacon and a sprinkling of chives.

Thank you for your recipe nanasee1.
Sounds like this could be similar to your one with pear instead of apple geldof.
