Gluten free pancake for breakfast

I make this a few times a week when courgettes are cheaper. Using my whizz thing, I put one egg, 1 courgette, salt and pepper and 1/3 cup of self raising gluten free flour. I also add various flavours, all tiny amounts, curry powder, ginger, cumin, mixed spice, you name it, I've tried. it. I give this mixture a couple of bursts and put into a heated frypan about 3 minutes pers side, I don't hurry it.
On top I put a dollop of my favourite mayonnaise and chopped tomato. Yum.
I think you could add anything to it, mashed pumpkin might be nice.
