Lime ginger meringue pie 115g melted butter 1 pkt ginger nuts (I use Select brand from Countdown) 2 eggs separated 1 tin condensed milk 2 or 3 limes pinch of salt 4 Tbsp sugar Crush gingernuts mix with melted butter, press into pie plate. Mix condensed milk, egg yolks, juice and zest of limes and salt. Pour into crumb crust. Beat egg whites with sugar to make meringue, spoon over lime filling. Bake 120c for 30 mins. This is adapted from a lemon meringue pie recipe, have had good reviews whenever I have made this.
