Just a hint if you don't like the strong bitterish flavour of wild duck after been frozen. Remove the wax sac just above the 'popes nose' where the small tuff of feathers are. There is a small sac either side, this is what gives the meat a very strong flavour after freezing. Learn't this one many years back, it would also apply to other game birds that are water fowl like pukeko etc.
