Easy, fast chicken curry please

Thai Chicken Curry with Lime and Coconut

This is a real favourite of mine and incredibly fast and easy to make.

Ingredients

1kg chicken thigh or breast meat / cut into thick strips
1T red curry paste (if using John West red curry paste I use 2tbsp as I find it’s not that hot)
1T vegetable oil
2-3T brown sugar
4 lime leaves (I use 2 whole lemon leaves if I don't have lime)
2t finely grated lime rind (again, I use lemon rind if I don’t have limes on hand)
250ml coconut cream
1T Thai fish sauce
2T coconut vinegar (most Asian shops have this, it’s just a very mild vinegar, only a couple of dollars a bottle, or water down some white vinegar or add a dash of white wine)
3T shredded coconut / coconut threads (otherwise use desiccated)
4 fresh sliced deseeded chillies (these go on the side, so optional)

Method

Place chicken and curry paste in bowl and toss to coat
Heat the oil over high heat, add chicken and stir fry 5 mins or until lightly browned
Add sugar, lime leaves, lime rind, coconut cream and fish sauce
Simmer over medium heat for 4 mins until sugar dissolves
Stir in the vinegar and simmer until chicken is tender
Serve chillies on side if desired…

mmmm sounds yummy... any more I am thinking real basic . And not tooos spicy

This one is simple, and while not a "real" curry, it has curry powder and is mild :)

Tomato Curry Chicken
• 6-8 chicken thighs -skinless preferably - bone-in is fine
• 2 tablespoons butter
• 1 onion, chopped
• 2/3 cup beer
• 1can condensed tomato soup
• 1 teaspoon curry powder
• ½ teaspoon dried basil
• ½ teaspoon ground black pepper
• ¼ cup grated Parmesan cheese or lots of tasty cheese

1. Preheat oven to 175 °C.
2. Place chicken in a oven proof baking dish.
3. Melt butter in a medium frypan over medium heat.
4. Saute onion, then stir in beer, soup, curry powder, basil and pepper.
5. Reduce heat to low and simmer for about 10 minutes, then pour over chicken.
6. Bake at 175 °C for 1 hour; sprinkle with cheese for last 10 minutes of baking.

Nice served with rice or potatoes.
