Recipe for Rumbabas

Does anyone have a recipe for rumbabas, please? These delicious bread-cakes, soaked in rum, are never seen now - bakers' shops do not even know what they are. Shame, coz they are lovely. Thank you. Tyneside

Davidt4 you are amazing. So pleased to have got in touch with someone who knows about them. It is a very complicated procedure according to the recipe but every step of the way is explained and illustrated
- I will have a go. Want to do something "different". When I scoffed these many times many years ago, did not think they were so complex to make - but worth it. Thank you so much. Amazing. I have tried all over for the recipe. Again, many thanks. Tyneside.

I used to buy them off Sabato, who imported them. I remember being so excited when Sabato started, as I could finally buy (some) of the food I had read and dreamed about. That was yonks ago so pleased to see they are still going strong:

The best babas I have ever tasted were from Continental Cakes or maybe it was a deli, in Courtenay Place. The owner was a Swiss guy and everything he made was wonderful.That was many years ago (1970's)and I still remember their deliciousness. I've never tried to make them though.

Am interested in the Rumbabas too . I used to have a special tin to bake them in but never used it and gave it away. Can I use an ordinary cake or loaf tin or what do folks use to bake them in?

I think rum babas are traditionally baked in metal dariole moulds, but ramekins would be okay, or any small mould that gives you small round cakes. Muffin tins maybe. I have also used a bundt tin and served slices rather than individual cakes.

I always thought they were French but it seems there is an Italian version as well.

I've just finished a jar of them from Sabato and have got some strawberries macerating in the leftover syrup. I love rum babas and am always on the lookout for them as well. I get mine from La Voie Francaise bakery in Mt Eden or a jar of little ones from Sabato (also available in limoncello syrup).
