I am looking for a substitute for Soy Flour. It must be wheat free (as opposed to gluten free). This if for baking biscuits so it needs to be a similar kind of weight etc.

Chickpea/gram flour is good, has a distinct flavour so would need to have spices etc to overpower the flour taste. Ground almonds are very good for gluten free biscuits. Check out sorghum flour as well. Buckwheat flour which has a strong flavour also but a good consistency and brown rice flour is also good. Maybe you could print the recipe here and someone might have some suggestions.
