PICKLED EGGS (from University of Otago Extension Bulletin)
12 eggs
2 & 1/2 cups spiced vinegar
garlic
Boil eggs 20 minutes until really hard, shell. Heat spiced vinegar gently with a few cloves of garlic. Strain boiling vinegar over the eggs (eggs MUST be covered by vinegar). Allow to get cold. Cover. Keep one week before use.

PICKLED EGGS
16 to 20 hard boiled eggs
1.5 litres cider vinegar
3 finely chopped chillis (dried is fine)
15 black peppercorns
15 whole cloves
4 cinnamon sticks
3 tsp whole allspice
Peel the hard boiled eggs, allow them to cool, and place them in a large jar that has been sterilized and cooled.
Heat the vinegar and spices in a saucepan until the liquid begins to boil. Reduce heat and simmer for 10 mins.
Remove from the heat and let cool to room temperature.
Pour the spiced vinegar over the eggs covering them completely.
Seal the jar tightly and store in a cool dark place for a minimum of 2 weeks before using.
