Advice needed re chutney

This afternoon I prepared all the ingredients to make the slow cooker chutney described in another thread with the intention of getting it cooked tonight.

Everything is in the slow cooker ready for it just to be turned on but I forgot and now if I turn it on it will be cooked in the early hours of the morning. Two questions.

Will it be okay to leave all the ingredients in the slow cooker and turn on in the morning (without refrigeration) or

Would it be okay to cook for a few hours tonight, turn off when I go to bed and turn back on in the morning? If I do this how long could I do each batch in? Maybe a third question, could I cook for 8 hours, set my alarm and turn the cooker off and leave the chutney to put in jars in the morning?
I have never cooked chutney before.

Your help would be much appreciated.

Personally I would refrigerate the crockpot with its ingredients and then cook it in the morning. It wont hurt the ingredients to be in the fridge overnight as the flavours will mingle and the chutney will be nicer when cooked.
