Parmesan and bacon pastry scrolls

This is a very quick little snack or something to serve with drinks.

You will need:
Sheets of puff pastry
Tomato paste
Grated parmesan
Finely chopped bacon (do this in the food processor)

Spread the pastry with tomato paste, then bacon and finely grated parmesan. Roll up and cut into 1/2 inch slices. Lay flat on a baking paper lined tray and bake at 180 deg C until cooked.

try this with a thin spreading of sausage meat.

Chef Richard Till suggests spreading puff pastry sheets with variations on mashed potato, roll and chill in the fridge before slicing into 1/2 cm widths and baking.

My Favourite Cut up a small onion and dice finely. Place raw onions in spuds when mashing.

(a) Add half a pkt of maggi onion soup to the potatoes, mash as usual then add 1 tbsp of whole grain mustard and mix thru.

(c) Grated tasty cheese and diced raw onion in mashed potatoes for tasty difference. Or use 2 spring onions.

(k) Add 1 ~ 2 tbsp each of Thai green curry paste and chopped parsley.

Have also made them with a spread of chutney or relish on pastry and sprinkle of cheese, then rolled up and cooked. Makes great little finger food for drinks, hot or cold. Good way if haven't had many ingredients handy.

What a great idea! Will come in really handy when son and friends come for dinner they are always starving and this would make a good finger food to go with pre dinner drinkies and cheese etc.

I make them spread with marmite and grated cheese on top. Makes a great nibble with drinks, always scoffed first!
