And will it defrost ok or more likely to be a bit soggy, I intend to leave it in the dish it's cooked in and put in in the freezer as is Thanks

Yes you can freeze your Apple sq, but take it out of the dish, and wrap it in glad wrap. It takes up less space in freezer, and when it thaws not, the bottom will not get soggy, as you can place it on a rack if you need too. Also if the cooking dish is glass or china, it may break in the freezer.
