What is your favourite way to cook mutton back straps?

Slowly in a SC. dice and flour in seasoned flour with pepper and salt and a littel dried mustard powder and brown off in oil in fry pan.then put into Sc with onions garlic carrots and celery and some potatoes. and some brown stock.and let then simmer away till they fall apart
