SINKING PASTRY :-( :-(

I thought I might make a curried mince pie for dinner. The sides are nice, crispy and golden, but every time the middle seems to just lay on the filling, and goes soggy. Can anyone advice please?

I would use a savoury short pastry on the bottom and flakey puff on the top. make sure you use a pie tin rather than a glass dish and must have the oven really hot. about 220C and your filling should be cold when you put into the pastry. Hope this helps

Thank you so much petal. It's so damned frustrating. My mum had a dome thingy she used to put in the middle of the filling, sadly when cleaning out the house I never found it, but it doesn't sound like I need it.

Just punch some holes in the top so the steam can escape.
