cookbooks they have a lovely fruit cake recipe. This is delicious. Does anyone have the recipe please? Thanks.

500 usalted butter
1 tsp baking soda
2kg mixed fruits
500g brown sugar
1 c water
1 c dark rum
1/4 tsp salt
1 heaped Tbsp golden syrup
Place all ingreds in heavy based pot and warm over med heat. remove from heat and leave at room temperature to allow fruit to soften and flavours infuse.
Next day
10 free range eggs
800 plain flour
2 tsp baking powder
2 heaped tsp mixed spice
1/4 tsp salt.
Preheat oven 100c. Grease and line 30cm square cake tin. Beat eggs until trebled in size. Soft dry ingreds into separate bowl. Alternate mixing rest of ingredients together. Bake 5-6hours. Place ovenproof cup filled with water into oven while cake is cooking.

I had lunch there last Sunday - it's my great indulgence when I travel south and it never fails to please :-) And I have both of Bevan Smith's recipe books. I picked up a newsletter at the cafe which said he will have a third book out in October :-)
