Riccotta cheese - what do I do with it?

Got given some Riccotta cheese and just wondering if anyone has some good recipes to use it in.

Mix it with some diced roasted pumpkin, spinach, onions and fill cannelloni tubes with it.

It taste divine too. . and vegetarian. I don't have the oringinal recipe with me, but here's something similar.

You can use it for a baked ricotta cheesecake also.

BUTTERMILK PANCAKES WITH RICOTTA CREAM
INGREDIENTS

1 cup (150g) self-raising flour
½ teaspoon ground cinnamon
1 tablespoon caster sugar
2 eggs, beaten lightly
1¼ cups (310ml) buttermilk
125g reduced-fat smooth ricotta cheese
½ cup (125ml) maple syrup
1 medium lemon (140g), cut into wedges

METHOD

1. Sift flour, cinnamon and sugar into medium bowl. Whisk in combined egg and buttermilk, gradually, until smooth. Cover; stand 30 minutes.

2. Pour ¼ cup (60ml) of the batter into heated oiled non-stick frying pan; cook until bubbles start to appear. Turn pancake; cook until browned underneath. Remove pancake from pan; cover to keep warm. Repeat with remaining batter to make eight pancakes.

3. Combine ricotta with a tablespoon of the maple syrup in small bowl.

4. Serve pancakes with ricotta mixture, remaining maple syrup and lemon
