Jam Making?

Hi, When you make jam do the jars have to seal. Have got two jars where the lid went down but the other two the lids havent gone down and I was wondering if this matters. The jam has set perfectly and I did steralise the jars.

I wouldnt worry about it grouch but I would use the ones that have not gone down first.

Maybe they are just slow to so so, or there was damage to the seals, they do need to be sealed, unless you can eat them fast.

My mother never use anything but those cellophane jam covers & her jams kept pretty well, so I can't imagine that unpopped seals would be too much of a concern. As samsnan said, eat those ones first.

Yes I remember they did use the cellophane covers so I dont think theres too much to worry about. Thank You to you all.

If you want them to keep for any length of time, yes.

Depends where you live.

My mother did the same. Her jams were kept in the cellar which even in summer never exceeded 5 to 8 degrees C!

In Northland this would never work
1. because of the high humidity
2. because of the high temps

So anything that does not seal properly will either be eaten straight away
or recooked
or frozen.
