I never have much luck with cooking these, always overlooked and tough. Do you pan fry, bake or grill in oven?

I like little center loin chops rubbed with oil sprinkle s/p sear in hot pan, turn heat down sizzle till cooked and the fat along side is crispy, rest few minutes. Bigger or shoulder chops I bake in oven drizzled with mint sauce and couple rosemary sprigs.

Don't overcook them you want the loin part still pink in the middle.

I sprinkle generously with salt both sides and grill. Always tender and delicious.

I do mine quickly on the george forman grill. they come out beautiful. oven cooking can make them dry. otherwise fifie has it right.
