Oil in pan, add a bit of butter, then fry the fish till it just starts to flake. This way you get the true taste of the fish, add a bit of salt and pepper to taste . Enjoy your meal.

Yea, I was going to do that in a minute, thanks much, a delicious fish which I prefer on the bone
