Leeks - recipes needed!

The garden has done well this year! Got this lot out this morning.

There's 48 there. will be saute-ing some with mushrooms and garlic to go with dinner tonight. Thinking of doing some leek and potato soup after digging up some spuds. But any other yummy scrummy recipe ideas are welcome and needed!

Cook them down and freeze them in bags or containers for winter. Put in pies with chicken or fish or use in soups. Lucky you!

Thanks sam! Tomorrow night it's going to be cheesy leeks and cauliflower (like in post 2 of that thread) - have a tonne of cauliflower in the freezer that needs using too.

To freeze them would you slice them and then cook them in oil and then freeze in batches?

Do you know if they need to be cooked to freeze? Or can you just chop them up and then freeze?

I always make a bacon and leek tart. Yummy with a salad.
Haven't personally tried this one but gives a good idea

Ooooh that does look good 2spotties. Mite make that today, have some cream that needs using so it'd be perfect. And will try for the first time to make my own pastry. last week of holidays, getting a bit bored so perfect time to try haha.

slice thin and dry the leeks then dust them in cornflour and fry until golden you can freeze then and use on soups as a topping or any dish they are so tasty like this

My regular Frittata recipe

Toadies Frittata
1 leek sliced in halved rinsed and chopped in slices (Half moons)
1 large potato cut into 1cm cubes
4 rashers bacon sliced
Dash of ricebran oil
8 Eggs - Beaten with S&P to taste.

I fry the leek, potato and bacon in the dash of oil till half cooked - then I have a square silicone baker I spread the mixture into. Pour over the egg mix.

Now this is what makes it extra special - sprinkle it with grated cheese and a mix of sunflower, pumpkin and sesame seeds. Bake for approx. 30 mins.

Its delicious and even meat and vege hubby loves it as it has a taste of "Bacon & Egg Pie" without all the pastry.

Yep. Getting so much out of the garden atm and still.so much to come. Lookjng forward to the tomatoes being ready soon. Hate having to buy veges, esp with the prices of some.

I freeze mine, but don't do anything with them, just slice and wash then free flow freeze then you can use as much or little as you would like
