When stewing your tomatoes do you

take off the skin first!
I was having a nosy at other peoples recipes and methods, and all that I saw took the skins off first (by putting them into boiling water for 1min, then in a container of ice), I must be lazy as this seems like to much trouble.

It all depends :)

I have just made Tomato Relish and used bush tomatoes with very tough skins (bred that way for ease of commercial harvesting) and so I removed those skins.But I have also made a savoury mix of tomatoes, courgettes, onions and celery and those were home garden tomatoes with very tender skins, so I left them on.

Sauce, juice, paste - yes.

if you take the hard centre out and cut a cross in the bottom first before putting them in hot water the skins come off easy . lesson learnt from one of the cooks at pony club camp who cooked for 80 people
