You could make a trifle or just put whipped cream & some fruit on top.

Trifle sponge SHOULD be stale! It crumbles up better that way. Fresh sponge cut in cubes for trifle isn't trifle, it's "Fairy pudding" . especially if soaked in jelly (one of the red ones). But I'm a serious traditionalist, and live by my old family recipes. Mind you, now the next generation do too, so we must be doing something right!
