Macaroni cheese

how do you stop the cheese sauce from drying out and disapeparing from the macaroni!

Make a bit more sauce and don't make it as thick as you want it to end up.

How long you leave it before eating it also makes a difference.

or, don't use so much macaroni, I only use one cupful of mac to 1 pint of milk

Yes, you definitely need to make extra sauce, more than your recipe says.

I find it really helpful to use the 'Italian trick' of reserving about half a cup of the pasta water, and adding it as needed at the end, with the sauce. It 'loosens up' the mixture beautifully!
