Spanakorizo (Spinach with Rice)

This is a nice cheap vegetarian dish that I have made for years. We have masses of silverbeet at the mo and I'm going to do this tonight with some other produce from garden.
For 4 people as a main course.
675g fresh spinach or silverbeet (I just grab a big bunch)
1 large onion
90ml olive oil or 55g butter
salt and pepper
150ml water
juice of half a lemon
110g white long grain rice
Wash, strain and shred spinach.
Saute the onion in the olive oil or butter until transparent, add the spinach, salt and pepper and stir until all the spinach is coated with the oil.
Add the water the juice of a lemon and bring to the boil. Add the rice, stir and cover and cook slowly for 10 mins or until the rice is cooked to your taste. If needed add a little more water during cooking, in order to prevent rice from sticking.
Strictly speaking this dish is always cooked with olive oil so that it can be cooked in advance and either eaten cold or warmed up a little before serving.
You can have on its own or serve with meat or fish.
