Beetroot Salad w Sour Cream/Horseradish Dressing
1 kg Beetroot cooked and skinned 3 Tablespoons shredded Mint
Dressing ½ cup sour cream 1-2 tablespoons horseradish cream ¼ cup oil Juice and Zest of 1 lemon Freshly Ground pepper
Dice or slice beetroot. Add dressing and sprinkle over mint.
Beetroot with Dill Horseradish Cream
10 smallish beetroot cooked and skinned 1 ½ tbsp horseradish cream 1 cup plain yoghurt 2 tbsp chopped dill Pepper and salt to taste. Diced beetroot place in bowl.Mix together yoghurt and horseradish and seasoning.Add dill and toss.Serve with dill sprigs.
