Easier - Hansells chocolate mousse, trifle sponge, Flake, strong coffee, Kaluha/Baileys or other liquer. Split the sponge to make two thin layers. Put one layer in a flat dish. Spoon over coffee and liquer. Cover with a similar layer of chocolate mousse and crumble over some Flake. Repeat, ending with a layer of mousse. Cover with lots of Flake and refridgerate. Surround with Scorched Almonds, strawberries and a few sprigs of angelica for something a little special.

Sounds nice but nothing like tiramisu which really does need mascarpone rather than chocolate mousse.

Ingredients:
3 eggs
1/2 cup sugar
250g mascarpone
1 cup strong black coffee
2 tbsp marsala, brandy or kahlua
20 sponge fingers
cocoa or grated chocolate for dusting

Beat egg yolks and sugar together until pale and creamy then fold in the mascarpone.Whisk the egg whites until stiff and gently fold into the mascarpone mixture.

In a separate bowl mix the coffee and liqueur together.Dip half the sponge fingers into the coffee mix and lay into the bottom of a small high-sided oven dish.Cover with half the mascarpone mix.Dip the remaining sponge fingers and place on top of the mascarpone, cover with the remaining mascarpone mix and refrigerate until needed.Dust with cocoa or grated chocolate before serving.
