Little ham Rosti -

These will take care of the last of the christmas ham. If measuring out with a tablespoon, this amount should mke around 30 rosti

2 cups grated cooked potatoes (leave the skin on for a rusticfeel)
2 cups finely diced ham
4 spring onions, finely chopped
6 tablespoons chopped parsley
2 whole eggs

Method:
1.Mix all ingrediants in a bowl and generously season with salt and pepper
2.Heat a lightoil in a heavy based pan and cook off spoonfuls of the rosti mix.Turn when the downside has coloured and cook the topside. Keep the heat even and dont try to cook too many at once.
3.Transfer to a baking tray covered with baking paper and finish cooking in a medium oven.
4.Once cooked, drain on paper towel and set aside to reheat before serving
