I have a glut of raspberries that I want to have for Xmas dessert but theywon't last as fresh tiil Christmas Day, so am thinking of turning them into a semifreddo ice cream dessert. I know they are not supposed to be kept for too long in the freezer either- any advice on how long one would last without getting too icy! Or other suggestions for a dessert that will keep til the 25th!
