What is the best things to add to a singed wild pork boilup, for fabulous flavour!

Watercress to be sure!
And I always keep some smoked pork bones from my kunes in the freezer. Just one or two give a lovely flavour to boil-ups!
I also add a bit of celery or lovage if I have some and some leeks or onions.
