Pork kebabs

I volunteered to make 50 pork kebabs. No problem and ready to go all but one query!
Do I need to marinade the pork pieces for a few hours and if so could you share your recipe with me.
I have been on the message board, left, but no kebab marinades, yes I know any pork marinade might do, looking forward to your help.

Spanish Pork Skewers

500g pork fillet
salt & pepper

Marinade:

big pinch of saffron steeped in 2 tab boiling water
3/4 tsp coriander seeds, roughly crushed
¾ tsp cumin seeds, roughly crushed
¾ tsp fennel seeds, roughly crushed
1 tsp sweet smoked paprika
2 cloves garlic, crushed with salt
1 tsp dried oregano
1 bay leaf, very finely chopped
2 tsp red wine vinegar
2 tsp olive oil

Cut pork in half lengthwise then into 2.5 cm cubes, flatten slightly.Place in container and add all marinade ingredients except oil, mix well.Add oil and mix again.Refrigerate at least 2 hours.

Thread on to skewers and char-grill 2 min each side or until slightly charred but not dried out.Season and serve.

This one is very easy and with a lot less ingredients :
1/4 c soy sauce, 1 tbsp honey, 1 tbsp brown sugar, 2 cloves garlic crushed, 1 spring onion sliced or red onion finely sliced, 1 t root ginger grated finely, 1/2 tsp cinnamon, 1 tsp red food colouring (optional)
Combine all marinade ingredients, add pork, turn to coat. Marinate at east 1 hour. Baste with marinade while cooking.

I ave used this marinade for chicken pieces, nibbles and pork fillet. Really yummy.
