i'm making some truffles with cream (ganache) and i'm wondering if anyone knows how long they will last! do you think i can freeze them!, if so do i freeze them before i coat them in chocolate or after! i don't want them to get condensation on them, thanks

I'd freeze them before coating them or they will sweat on thawing if coated.I usually keep mine in the fridge until nearer Christmas and then dip in melted chocolate and pack them into boxes for gifts.

ok, how long do you think they will last once thawed! i will be needing to be boxing the truffles on the 12/13th dec, how long do you think they will last after that! i don't have much time to make the truffles, looking at starting this weekend, so i think the freezer probably a better option,opinions welcome, i need to get as much info as i can before i start them
