Bread question

I like to make bread, and often have left over which inevitably turns hard after the 1st day. Can anyone tell me what I can add so that the bread doesn't turn hard after the 1st day. Many thanks

lecithin supposedly helps to keep bread longer however I can't say I found this.Surebake yeast has 'bread improveers' in it that is supposed to do this too.The best keeping bread I find is ciabatta - there is a wonderful recipe here in a thread titled easy yummy ciabatta (or something similar) if you are after a recipe.

if you are using a bread machine the recipe has two table spoons of oil in the recipe,,,i use virgin olive oil butany oil will do. ,

I have tried the lecithin and the surebake and don't think there is any difference to the other brands. I will try the ciabatta and see what happends. Thanks so much
