This is the lady talked about earlier on she has now made her 10,000th jar of jam for hospice and still going strong, she deserves a medal and more

Wow, that is a serious amount of jam.What an amazing lady, not only for the jam, but taking on the authorities and winning.

She got an exception in the end and had to show a visiting health officer exactly what she does and how and then got a certificate for jam and pickles for donating to the hospice shop - not for selling directly.

She does them in her home kitchen, not a certified kitchen which was why the officials clamped down on her in the first place. Because even if it is for charity it is finally sold to the general public, so should be made in a certified kitchen.

I am not so sure if the kitchen is the problem though - I always thought it is the people doing the preserving (and how they do it) that produced food poisoning, not if the floor goes 15cm up the wall and the walls are painted white and have a sink and a handbasin . If you do not use that certified handbasin after going to the toilet . and of course you cannot police that in any kitchen.

It was great that after the public outcry she got that exemption so can continue.
