Will it completely ruin them if I make the cranberry and apple sauces for xmas now and freeze them until xmas week!

I wouldn't think so, george_me25.I haven't frozen cranberry sauce but I have very successfully frozen cooked apples, both as sauce and plain stewed apples.:-))
