Sweet short pastry mini flans

I made these for the first time last night, thinking to put orange custard and stuff in them today. The pastry cases shrank! What did I do wrong!

Over worked the pastry (if you made it yourself)
Did you chill the pastry after you had rolled it and put it in the flan cases!

Oh.what a shame! - Chilling the pasty for as long as you can will prevent shrinkage. I recall Jamie Oliver saying about pastry, to pop it it the freezer before baking. The pastry HAS TO BE REALLY COLD! You'll know for next time! ;D

Did you use a baking blind! It is a bit of a pain with individual cases but I still do it anyway. I also make the sides slightly higher than the height of the pan, using my thumb and fingers to mould the pastry into the same shape as the sides of the pan, to allow for any shrinkage that may occur. Usually it is negligible but it is always better to be sure than sorry.

Thanks for your help. I had another couple of goes before giving up. Something tells me I'm not cut out to be pastry chef. The orange scented custard filling worked out well though, I'm just going to serve it with peaches and icecream.
