Silverside in Le Creuset casserole? Help please!

I have just put in a 1.5kg piece with bay leaves and golden syrup, covered it with cold water and put it on the gas hob. If I just want to cook it slowly and gently, should I leave the lid on!

I wouldn't, but if you can keep the temperature down it's probable okay to.

My gas top isn't the best - I can't turn it w-a-a-y down and don't have a simmer mat, but have raised it slightly on a kind of trivetty whatsit so keep the temperature down. I have left the lid slightly off to allow a little bit of evaporation - a nice compromise, maybe!

Best done in a crock pot,also use cloves as well.

I usually do this in a slow cooker, but was too late to get it on today, so am opting for this way - cross your fingers that it works ok. I hate being out of my comfort zone - lol

I put mine in the oven in a casserole. too late now, but would that have allowed you to control temp a bit better!
