Eggplant & Black Mushrooms

1 large eggplant or 4 small
1 tsp dried shrimp (optional)
6 dried black mushrooms
1 red capsicum
2 cloves garlic, chopped
3 tab peanut oil
2 tsp chilli bean sauce/yellow bean sauce
½ tab dark soy sauce
½ tab light soy sauce
2 tsp salt
1 tab black vinegar
1 tsp sugar
2 tab tomato paste
½ c chicken stock
2 tab Shaoxing wine

If using shrimp soak in wine 1 hr.
Cut eggplant into large cubes, sprinkle with salt and leave for 30 min.Squeeze excess moisture out.
Soak mushrooms in warm water 30 min, cut stalks out & halve.
Cut capsicum into triangles.
In large pan heat oil & when smoking add eggplant.Stir 5 min until browning.Add drained shrimp, after 30 sec add garlic, mushrooms, peppers and stir-fry 2 min.Add stock, soaking wine and mushroom liquid, stir 30 sec.

Add rest of ingredients and stir over medium heat until eggplant cooked and juices thickened (about 10 min).

Serve hot, warm or cold.

Chinese Greens with Fermented Bean Curd

700g green leafy vegetable (e.g. Pak Choi, Tatsoi, Spnach)
1 tab peanut oil
3 cloves garlic sliced
2 tab fermented bean curd
3 tab Shaoxing wine
2 tsp chilli bean sauce
6 tab water

Heat wok, add oil, when smoking add garlic, bean curd & veges & stir-fry 2 min.Add rest of ingredients & stir-fry 5 min or until just tender.Serve hot.

Roast Hoisin Duck

Serves 4

1 duck, washed & trimmed
1 tab honey
2 tab hoisin sauce
2 tab light soy sauce
1 tsp crushed garlic
1 tsp grated ginger
2 tsp sesame paste
1 tsp salt
½ tsp Sichuan pepper, crushed

to serve:

spring onions, Mandarin pancakes or rice, Chinese plum sauce

Combine marinade ingredients and heat to form a thick paste.Smear 2 tab over duck and rub in.

Put duck in oven bag, make a few small holes in bag near tie.Marinate 1 hour.

Heat oven to 190C, place duck in roasting tin breast side down.Cook 45 min, turn over and cook 1 hour.Remove from oven, remove bag, drain off juices into jug to let fat rise.

Increase oven to 225C, return duck for 5 min to crisp.

Carve duck thinly, skim fat off sauce, serve hot or warm.

Pak n save sell duckand I just love davidt4 's recipe.I'll be doing this most definately.Never cooked a whole duck before.

Don't throw away the duck fat.It will taste gorgeous and could be used to stir-fry vegetables, or to add to noodles or rice.

Soy Chicken Wings

8-10 chicken wings (jointed pieces)
oil for frying
2-3 cloves garlic
3-4 slices ginger
1/4 cup dark soy sauce
1 Tbsp light soy sauce
1/4 cup water
1 tsp sugar

Peel and slightly crush the garlic. Heat the oil in a frying pan or wok. Add garlic and ginger and fry for about 30 seconds. Add the chicken wings and brown on all sides. Add the dark soy sauce, light soy sauce and water. Reduce the heat and braise (simmer) for 25 minutes. If the liquid evaporates too much, add more water.Add the sugar, heat until the sugar has dissolved and the sauce has reduced to the required consistency.

Steamed Beancurd

300-350 grams tofu
2 Tbsp dried shrimp
2-3 pieces dried Chinese mushroom
1 egg
1/2 tsp light soy sauce
1/2 tsp sugar
1 Tbsp cornflour

Soak the shrimp in some water, drain and then dice. Soak the mushrooms until re-hydrated, squeeze out the excess water, cut off and discard the stems, cut into a rough dice. Roughly mash the tofu and add all the other ingredients. Mix together. Transfer to a steaming dish and steam over high heat for 10 minutes. To serve, sprinkle over some soy sauce (about 2 tablespoons), sesame oil, and chopped spring onions.

Bordeline chinese!

500g mince
2 x packets chicken noodle soup
Diced onion

Cabbage
Green capsicum
Red capsicum
Chili

Brown off onion, add mince and brown slightly. Add water and packets of soup mix. Bring to boil and simmer for 15 minutes. Once that's done, add sliced cabbage/capsicum/chili or what ever else you like to it. Steam for a couple of minutes so capsicum retains some crunch and then serve.
