I make a pocket and stuff with your favourite stuffing, otherwise just rub with oil salt pepper and herb mix I cook in an oven bag or covered as it can be dry if overcooked, I have a meat thermometer which I use to cook med rare. I have also cubed it up and made a casserole with it!

brown it in a fry pan. have your oven on very high and cook it for 30minutes a pound for a nice tender rare roast beef

is that like slowly boiling it! Like a corned beef!

Ive only ever roasted them, but have always found them to be a bit dry. I dont like them too rare, so cooking them well does dry them out.

I always cook mine in the crock pot, just as it is - no liquid.
It makes it own most yummy gravy too - a bonus!

It's only dry if it's overcooked!Just roast it but don't overdo it.

I do mine for 20 minutes a pound plus 20 minutes in a hot oven and then let it rest for another 10 minutes so that the juices settle in the meat before you carve it - never had a dry one yet.Don't salt it though as that will dry the meat out - just a little oil and black pepper is all that's needed.
