Leek soup. Anyone have a recipe.

Can't really use any dairy products in it .

I made one the other day from basic principles no recipe really.Used chicken stock half a chopped leek and a large potato peeled and chopped also added a piece of pumkin I added a few spices from memory allspice corriander and cinnamon with a couple of pinches of chilli flake simmered for about 3/4 hour mushed it a bit with a potato masher andthen seasoned and served with some toasted sourdough bread it was very nice.

Soups really are so easy :)

I really like leaks and they are so cheap at the moment I bought 2 today at the supermarket for 99c each how cheap is that also got a nice cabbage for 99c.

I make the leek soup fom the "French woman don't get fat" cookbook ll, but it's surprisingly nice and very simple.finely chop 3 leeks.mostly the white part but can use a bit of the green. Sure in butter till softened. add I litre of either water or chicken or veg. stock, simmer till cooed then blend with stick blender. Season to taste
