Have a carton of buttermilk in fridge that expires today.
what can I use it in, apart from scones. which I will make.thanks.

Pancakes, muffins or any recipe that requires milk. Often makes them lighter.

This thread will be too late but I have a nice, easy and most importantly a yum carrot cake recipe that uses buttermilk.

It freezes fine.I often freeze left over in the quantities I need for certain recipes so when I defrost I only defrost what I need.
