Mint slice truffles and choc coating help.

I have pre made 200 truffles ( in freezer now), they're for a function on 25 August, how soon can I choc coat them and how do I store them please if anyone knows!

You need to bring them up to room temperature before coating them - I generally refrigerate balls until firm then coat in chocolate and then freeze.(serve them straight from freezer)They do tend to sweat though.If you coat from frozen, the coating can crack as the whole truffle defrosts.

I'd tend to just remove from freezer, defrost - roll around on paper towels (to remove any moisture) then coat in chocolate the night before using.I hope that helps.

Personally, I wouldn't coat them until just before they are needed.(the day before perhaps) Once coated I wouldn't refrigerate them either, as it affects the gloss on the chocolate.
